What is Salna?
Salna is a flavorful and spicy South Indian curry, often served as an accompaniment to parotta (layered flatbread) or biriyani. It has a rich, aromatic gravy made with a blend of spices, coconut, and sometimes nuts, giving it a slightly creamy texture.
There are different variations of salna, including:
- Vegetable Salna – Made with mixed vegetables like potatoes, carrots, and peas.
- Chicken Salna – A non-vegetarian version with chicken, commonly found in Tamil Nadu roadside eateries (mess-style).
- Mutton Salna – Similar to chicken salna but richer in taste due to the slow-cooked mutton.
- Plain Salna – A basic version without meat or vegetables, often served with parotta.
The key ingredients typically include onions, tomatoes, ginger-garlic paste, green chilies, garam masala, coriander powder, fennel seeds, coconut paste, and sometimes poppy seeds or cashews for creaminess. The dish is known for its deep, aromatic flavors and is a staple in South Indian roadside eateries (especially in Tamil Nadu).

Preparation Instructions:
1. Thaw the Salna base (10oz).
2. Add paste, 10oz of water and desired salt to pressure cooker.
2. Variations:
Plain Salna - cook for 10 mins on high heat with 10oz water.
Vegetable Salna - add potatoes, carrots, peas and cook for 8 mins on high heat or 2 whistles.
Chicken Salna - add chicken (1lb bone-in or ~400g) cook for 10 mins on high heat or 5 whistles.
Mutton Salna - add mutton (1lb or ~400g) and cook on high heat for 8 whistles.
4. Garnish with coriander and curry leaves (optional step).
5. Serve hot with white rice, chapathi, parotta or pulao.
