What is Kolambu?

Kolambu is a spicy tangy tamarind based curry that brings authentic home-made taste by adding protein of your choice like fish, shrimp, egg or vegetables like drumstick, potato, field beans, brinjal (eggplant) based on your preference.

Preparation Instructions:

1. Thaw the Kolambu base (10oz).

2. Add paste to boiling water (10oz) for 5 mins and add salt as required.

3. Variations:

Fish Kolambu - Add fish (1lb or ~400g) and cook for 10 mins on medium heat until fish is cooked.

Shrimp Kolambu - Add Shrimp (1lb or ~400g) and cook for 7 mins on medium heat until shrimp is cooked.

Veg Kolambu - Add overnight soaked beans with choice of vegetables (1lb or ~400g) and cook for 15 mins in medium heat until beans and vegetables are cooked.

Egg Kolambu - Add poached or raw egg (4 or 5 eggs) and cook for 8-10 mins until egg is cooked to desired consistency.

4. Garnish with coriander and curry leaves (optional step).

5. Serve hot with rice
