What is Ambur Biriyani?

A famed South Indian delicacy from Ambur, Tamil Nadu — slow-cooked with aromatic seeraga samba rice, succulent meat or vegetables, and a signature blend of spices for a rich, mildly tangy flavor.

Preparation Instructions - Pressure cooking style

  1. Thaw the Ambur Biriyani Base (10oz) and sauté in a pressure cooker for 3 minutes.
  2. Add 1 lb chicken and sauté for 2 minutes.
  3. Add 750ml (10oz) of water and add salt to taste.
  4. Close the lid and cook on high flame for 7 minutes.
  5. Add 400g (10oz) seeraga samba rice (washed, soaked for 20 minutes, and drained). 
  6. Bring to a boil for 2-3 minutes.
  7. Lock the pressure cooker lid and cook until 1 whistle.
  8. After the whistle, reduce to low heat for 7 minutes, then turn off the stove.
  9. Let it rest for 10 minutes, then fluff and serve with raitha.
